This is a truly delicious start to the weekday piled high with yoghurt and fresh berries: so it’s worth making a big batch on Sunday. Try cranberries, dates, mango pieces hazelnuts, brazils, walnuts or whatever takes your fancy.

Apricot & Almond Granola

Apricot & Almond Granola by Lurpak

1. Heat the oven to 180ºC/160ºC Fan/Gas 4. Then, in a bowl combine the oats, almonds, seeds and mixed spice.
2. In a small pan over a gentle heat melt the Lurpak® and honey together then drizzle over the dry ingredients in the bowl. Stir well until the ingredients are fully coated and begin to clump together.
3. Tip onto a large baking sheet and bake for 20 minutes stirring well halfway through. When done, stir in the apricots while still hot and press the granola down with the back of a spoon to help it clump together as it cools. Once cool pop it in an airtight container, it’ll keep for 3-4 weeks.

Ingredients

  • 200g clear honey
  • 150g Unsalted Lurpak®
  • 300g porridge oats, jumbo work best
  • 100g whole almonds
  • 80g pumpkin seeds
  • 150g chopped apricots
  • 2 tsp mixed spice
