Christmas Roast by
1. Dice the bacon and apricots, add the Lurpak®, lemon juice and thyme and mix.
2. Make an incision at the top of the chicken or turkey and lift the skin away, push the bacon mixture in, pushing down to cover all of the breast.
3. Quarter a lemon and stuff inside the chicken cavity.
4. Roast as usual in the oven.
Ingredients
- 1 chicken or turkey
- 3 rashers bacon
- 1 tbsp Lurpak®
- 15 dried apricots
- 3 – 4 sprigs lemon thyme
- Juice of 1 lemon
- 1 lemon, quartered
