WI Victoria Sponge by Barbi Colson
A mixture with 4 eggs will make a 2 layer 8” cake.
1. Add the eggs, flour, Lurpak® and caster sugar into a bowl.
2. Add the baking powder on top and cover with the water and let it fizz.
3. Use a mixer to mix everything together. Scrape the sides of the bowl and mix again.
4. Divide between two 8” baking tins, cook in the centre of a pre-heated oven at 180ºC until golden brown (around 20-25 minutes)
5. Fill with jam and sprinkle with caster sugar – bliss!
Ingredients
- 4 eggs
- 200g Lurpak® butter
- 200g caster sugar
- 200g self raising flour
- 2 tsp baking powder
- 3 tbsp ‘hand hot’ tap water
Please note:The ingredient amounts are based on an average egg’s weight. For exact measurements, please crack all 4 eggs into a bowl, weigh and then use an equivalent amount for the butter, caster sugar and flour.

when makeing a victoria sponge is it ok to use lurpac light or must it standared butter
