St Clement's Cupcakes by Gourmet Cupcake Company
For the cupcakes:
1. Preheat oven to 170°C.
2. Place the butter, sugar, eggs, flour and baking powder into a large mixing bowl.
3. Mix on a low speed until the lumps of Lurpak butter are all gone, then mix on a high speed for 30 seconds.
4. Add the orange zest and orange extract and mix again until incorporated.
5. Divide evenly amongst paper cupcake cases and bake for around 20 minutes or until the tops of the cakes feel springy to the touch.
For the icing:
1. Place the Lurpak butter in a bowl and gradually beat in the icing sugar.
2. When all the icing sugar is incorporated beat on a high speed until light and fluffy.
3. Add the lemon zest and lemon extract and beat again until all incorporated.
4. Gradually add the colouring to reach the desired shade.
5. Pipe onto the cupcakes or smooth over with a palette knife.
Ingredients
- For the cupcakes:
- 110g Lurpak Salted Butter, softened at room temperature
- 110 g caster sugar
- 110g eggs (about 2 large sized eggs)
- 110g self raising flour
- 5g (about 1 tsp) of baking powder
- 1 orange, grated zest
- 1 tsp of orange oil or orange extract
- For the icing:
- 125g Lurpak Unsalted Butter, softened at room temperature
- 250g icing sugar
- 1 lemon, very finely grated zest
- ½ tsp of lemon oil or lemon extract
- A little yellow food colouring

Hi Heather, Lurpak Spreadable simply has a little olive oil added to it to help it spread better. It is still perfectly suited to baking!

My eleven year old granddaughter is just learning to bake, and loving it, this looks like the perfect recipe for her to try, not to hard but with cupcakes that look and taste delicious. thanks, keep up the good work Dawn
