Banana Date & Honey Loaf by Lurpak
1. Heat the oven to 160ºC/140ºC Fan/ Gas 3, then butter and line the loaf tin with greaseproof paper.
2. Mash the bananas well, then tip all of the ingredients, apart from the dates, nuts and the extra honey, into a large bowl. Whisk until everything is well combined then stir in the dates and nuts.
3. Pour the mixture into the tin and level. Bake in the oven for 1hour – 1hour 15 minutes or until a skewer comes out clean. Remove from the oven and while the cake is still warm make several holes in the top with a skewer and drizzle over the remaining honey.
4. Allow to cool completely, then turn out of the tin, peel off the greaseproof paper and cut into thick slices to serve.
Ingredients
- 200g self-raising flour
- 160g Slightly Salted Lurpak at room temperature
- 80g caster sugar
- 2 tbsp clear honey & 1 tbsp for drizzling
- 2 eggs
- 2 medium ripe bananas
- 80g chopped dates
- 40g chopped walnuts
Please note: Recipe measurements are based on the Lurpak tin measurements (990ml).

this recipe has fast become a family favourite. It's good for using up those bananas that no one wants to eat
