Blueberry & Gin Muffins by Lurpak
1. Roughly crush the blueberries in a bowl with the back of a spoon. Add 4 tablespoons of gin and soak for 20 minutes. Meanwhile, sift the flour and baking powder together in a bowl.
2. Stir in the sugar and make a well in the centre of the mixture. In a saucepan, melt the Lurpak® over a low heat. In a separate bowl mix the egg, yoghurt and melted Lurpak®, then pour into the well in the flour mixture. Mix quickly.
3. Now carefully fold in the blueberries and gin with a metal spoon.
4. Arrange paper muffin cases in a muffin tray – and spoon in the mixture. Bake at 180ºC/350°F/Gas Mark 4 for approximately 25 minutes. Use a knife to check the muffins are cooked – if the knife comes out clean, then they are ready.

- 115g caster sugar
- 275g plain flour
- 1 egg
- 250ml natural yoghurt
- 115g melted unsalted Lurpak®
- 150g blueberries
- 4 tbsp gin

Must try this recipe out. Only 4 tbsp of gin....what a pity !!!! lol
