Burger & Thyme Potato Wedges
Nothing beats a homemade burger - especially when it is accompanied by thyme potato wedges.

Nothing beats a homemade burger - especially when it is accompanied by thyme potato wedges.
Instructions
1. Preheat the oven to 200ºC/400ºF/Gas 6.
2. Mix the onion, beef, chilli flakes, salt and freshly ground black pepper together in a bowl. Using your hands, shape the mixture into a patty and rub with olive oil.
3. Slice the potatoes into wedges and drop into a pot of boiling water for four minutes. Drain and place on a baking sheet. Drizzle with olive oil, salt, pepper and fresh thyme leaves. Roast for 15 minutes or until golden brown.
4. Heat a griddle pan until smoking hot and a knob of Lurpak®. Cook the burger for 3-4 minutes on each side, or until cooked through.
5. Slice a ciabatta in half and grill each side on the griddle pan. Spread with Lurpak® while still hot.
6. Place the ciabatta on a plate and top with a small handful of fresh basil or spinach leaves and then the burger. Drizzle with ketchup or your choice of topping and then place the other slice of griddled ciabatta on top. Add the wedges to the plate and serve.

- For the beef burger:
- ¼ onion, finely chopped
- 200g/7oz minced beef
- Pinch dried chilli flakes
- Salt & black pepper
- Dash olive oil
- 2 slices ciabatta, chargrilled
- Handful fresh basil or spinach leaves
- Knob of Lurpak®
- Tomato ketchup, to taste
- For the thyme potato wedges:
- 1 large potato, cut into wedges
- 2 garlic cloves
- 2 tbsp olive oil
- Salt and freshly ground black pepper
- 1 sprig fresh thyme, leaves only
