Cauliflower & Parmesan soup

Cauliflower & Parmesan soup by Lurpak

1 .In a large saucepan, fry the onions in a large knob of Lurpak® until soft.
2 .Add the cauliflower and cook for one minute. Pour in the milk and simmer until the cauliflower is tender.
3. Pour the mixture into a blender and whizz until smooth. Stir in the Parmesan. Serve immediately with crusty bread and sprinkle over extra Parmesan.

  • Knob of Lurpak®
  • 1 large cauliflower head, roughly chopped
  • 2 garlic cloves, roughly chopped
  • 750ml full fat milk
  • 50g Parmesan, finely grated
  • 1 large onion, roughly chopped
