Chocolate Nut Cookies by Lurpak
1. Preheat the oven to 190°C/375°F/Gas Mark 5.
2. Grease two baking trays (heart shaped if you wish!) using the inner foil of your Lurpak.
3. Mix the rest of the Lurpak® with the caster and demerara sugar. Beat with a wooden spoon for about 5 minutes until smooth and fluffy. Beat in the egg, then stir in the pieces of chocolate and the nuts.
4. Sieve the flour, bicarbonate of soda and salt into the mixture, and stir well.
5. Spoon the mixture into the baking trays and bake for 15-18 minutes, until golden.
6. Carefully transfer the cookies to a wire rack and allow to cool, then store in an airtight container.
Ingredients
- 125g unsalted Lurpak®, softened, plus extra for greasing
- 70g caster sugar
- 70g demerara sugar
- 1 egg
- 60g milk chocolate, broken into small pieces
- 80g walnuts, roughly chopped (or whichever nut you like)
- 140g plain flour
- 1 tsp bicarbonate of soda
- Pinch of salt
