Muffins with Toffee and Apple by Lurpak
1. Preheat the oven to 190C/380F/Gas 5. Line a 12 hole muffin tin with paper cases.
2 .In a large bowl, mix together the eggs, melted Lurpak®, sugar and milk. Sift in the flour, baking powder, salt and cinnamon. Stir well to combine. Add the apple and lightly mix.
3. Using only half of the mixture, ¼ fill each of the muffin cases with the mixture and top with a few pieces of toffee. Using the rest of the mixture, pour over the top so the cases are half full.
4. Bake in the oven for 30-35 minutes until golden. Once cooked, transfer to a wire rack to cool.

80g caster sugar
240ml milk
300g plain flour
2 tsp baking powder
1/2 tsp salt
Pinch of cinnamon
2 eating apples, peeled, cored and finely chopped
200g ready bought toffee pieces
