Pumpkin and Blueberry Muffins by Lurpak

1. Preheat the oven to 180C/Gas 4. Butter two 12-hole muffin trays.
2 .In a large bowl, combine the flours, sugar, cinnamon, baking powder, bicarbonate of soda and salt. Stir to combine.
3. Add the melted Lurpak® pumpkin purée and eggs. Stir well. Gently fold in the cranberries. Spoon the batter into the prepared muffin trays.
4. Bake in the oven for 20 minutes, until the muffins are risen and golden. Make sure they are cooked all the way through.

Ingredients


    125g Lurpak® melted, plus a little extra for greasing
    225g plain flour
    100g wholemeal flour
    125g caster sugar
    2tsp ground cinnamon
    1tsp baking powder
    1tsp bicarbonate of soda
    ½ tsp salt
    700g cooked pumpkin, puréed
    2 eggs
    200g blueberries, halved
