Quick and delicious, this is an exciting way to use eggs and fresh dill.

Smoked Salmon & Dill Frittata

Smoked Salmon & Dill Frittata by Lurpak

1. Begin by boiling the potatoes in salted water. Once soft, drain and set aside.
2. While the potatoes are cooking, add a knob of Lurpak® in a pan fry the onions until soft.
3. Whisk the eggs and season.
4. Add the potatoes, onion, salmon and dill to the eggs and stir.
5. Heat a medium frying pan and add another knob of Lurpak® . Pour in the egg mix and leave for a few minutes or just until the bottom has started to set. Preheat the grill.
6. Slide the whole pan under the hot grill until the top sets.
7. Cut into wedges and serve with fresh tomato.

Ingredients

  • 200g new potatoes, sliced thinly
  • 1 onion , peeled and sliced
  • Lurpak®
  • 6 eggs
  • 70g smoked salmon, sliced
  • Small handful dill, chopped
