Pastry making’s not as hard as you’d think; flour, Lurpak® and a bit of patience – oh and cold hands – are all that’s needed. Pile on top of this a hearty meaty mix and you’re on to a winter winner.

Steak & Ale Pie

Steak & Ale Pie by Lurpak

To make the pastry:
1. Mix flour and salt, add Lurpak® cut into small pieces. Rub in until mixture resembles breadcrumbs. Mix to a stiff dough with water.
2. Roll out on a floured surface to a narrow strip. Fold into three. Give a quarter turn so one of the open ends is towards you and roll out again. Do this three times in all. Cover pastry and leave to rest (about 15 minutes) then roll into desired shape. Allow pastry to rest for 20-30 minutes in a refrigerator or cool place before use. Always take care to roll away from you and do not break the air bubbles that will rise.

To make the filling:
3. Preheat oven to 230°C/450°F/Gas Mark 8.
4. Place in a large frying pan the oil, onion, garlic, and thyme. Stir until softened. Add cubed steak and flour to brown then pour in ale. Bring to the boil, stirring occasionally. Reduce heat and simmer for 1 to 2 hours until meat is tender. Spoon into a 1.2 litre (2 pint) pie dish with enough gravy to half fill the dish. Allow to cool.
5. Roll out the pastry 2 cm (1 inch) larger than your dish. Cut off a pastry strip 2 cm (1 inch) wide from round the pastry. Press this on to the dampened dish rim, then dampen the strip. Cover the dish with the pastry round and seal the edges.
6. Brush with beaten egg and bake for about 20 minutes until golden brown. Reduce heat to 180°C/350°F/Gas Mark 4 and cook for a further 25-30 minutes until thoroughly heated.
7. Serve immediately.

  • 225g (8 oz) plain flour
  • Pinch salt
  • 150g (5 oz) Lurpak® Slightly Salted
  • Cold water to mix
  • 1 tbsp vegetable oil
  • 675g stewing steak, cubed
  • 3 tbsp plain flour
  • Salt and freshly ground black pepper
  • 1 medium onion, diced
  • 300ml stout/Ale

    Anyone know how many this recipe serves? I'm guessing 4-6? Not sure whether to half or quarter it for 2 people...

    Replace the ale with a tin of Guinness, or if you can find it Belhaven Best!! Delicious!!

    Unfortunately, this has ale in which is rather expensive.
