The Best Boiled Cake in the World by Judith May
1. Pre-heat oven to 170ºC/Gas Mark 3.
2. Place fruit, cherries, sugar, butter, spice, bicarb and milk into a fairly large saucepan. Bring to the boil and simmer for five minutes. Cool for 5-10 minutes.
3. Stir in the flour and eggs.
4. Line an 8” deep-sided cake tin with grease-proof paper. Turn cake mixture into tin.
5. Bake for 40 minutes, then reduce the heat to 150ºC/Gas Mark 2 for another hour and a half. If cooking in a fan assisted oven, then the cake should be checked after an hour, rather than one and a half hours. Test with a skewer, which should come out of the cake clean.
6. Allow to cool in tin for five minutes, then turn out onto a cooling rack and leave until cold.
Ingredients
- 500g mixed dried fruit
- 100g glace cherries – chopped
- 175g brown sugar
- 100g Lurpak Slightly Salted
- 1 tsp mixed spice
- ½ tsp bicarbonate of soda
- 300ml fresh milk (for Christmas you could change this to Guiness or similar)
- 350g self-raising flour, sifted
- 2 large eggs, beaten

Sooooo easy to make! I poured a little brandy over the top to soak in, can't wait to try some..................more later!
