Lurpak

This cake can be used as a Christmas Cake, Simnel Cake at Easter (preferably with a layer of marzipan in the middle) or as wonderful everyday cake that keeps really well - it even freezes well. It is so easy to make and when my family come to visit it disappears in double quick time.

The Best Boiled Cake in the World

The Best Boiled Cake in the World by Judith May

1. Pre-heat oven to 170ºC/Gas Mark 3.
2. Place fruit, cherries, sugar, butter, spice, bicarb and milk into a fairly large saucepan. Bring to the boil and simmer for five minutes. Cool for 5-10 minutes.
3. Stir in the flour and eggs.
4. Line an 8” deep-sided cake tin with grease-proof paper. Turn cake mixture into tin.
5. Bake for 40 minutes, then reduce the heat to 150ºC/Gas Mark 2 for another hour and a half. If cooking in a fan assisted oven, then the cake should be checked after an hour, rather than one and a half hours. Test with a skewer, which should come out of the cake clean.
6. Allow to cool in tin for five minutes, then turn out onto a cooling rack and leave until cold.
