Tomato, Red Onion & Thyme Tarte Tatin by Lurpak
1. Heat the oven to 200ºC/180ºC Fan/Gas 6. In a tatin pan, or other thick based, shallow pan (approx 20cm diameter) that can go from hob to oven, melt half of the Lurpak® and stir in 1tsp of sugar. Cook the onion wedges on a medium heat for 8-10 minutes until they start to caramelise then tip them into a bowl with any Lurpak® from the pan and set aside.
2. Heat the remaining Lurpak® in the pan, stir in the remaining sugar and the garlic. Arrange the tomatoes cut side down and scatter with half of the thyme leaves. Sizzle for 1 minute then take off the heat. Scatter over the onions using them to fill any gaps between the tomatoes and season well.
3. Cut a circle of pastry just bigger than the pan. Lay it over the tomatoes and tuck in around the edges. Cook in the oven for 25 minutes until it’s puffed up and golden.
4. Allow to cool for 5 minutes then invert a serving plate onto the pan and upturn the tarte onto the plate. Drizzle any juices left in the pan over the tarte and scatter with the remaining thyme leaves.

- 4 tomatoes cut in half
- 1 red onion sliced into thin wedges
- 50g Lurpak® Slightly Salted butter
- 1 garlic clove, finely sliced
- 2 tsp sugar
- Small bunch thyme
- 1pk ready rolled puff pastry
