Truffle Square by Lurpak
1. Preheat the oven to 200C/Gas 6. Melt the Lurpak® and chocolate in a bowl over a pan of hot water (but not simmering). In a separate bowl set over a pan of hot water, whisk the eggs until warm. Remove from the heat and whisk for 5 minutes until thick.
2. Using a metal spoon, slowly fold the chocolate mix into the eggs, then stir through the maple syrup and ¼ tsp salt.
3. Pour the mixture into a 20cm square tin, lined with foil and place in the middle of a deep roasting tin. Pour in hot water until it comes just over halfway up the side of the cake tin. Make sure the water surrounding the cake tin is just above the line of the cake filling. Bake in the oven for 20 minutes.
4. Leave to cool to room temperature. Chill for 24 hours before removing the tin and slicing with a hot knife.

250g dark chocolate, broken up

4 tbsp maple syrup
