Rhubarb’s fruity flavour complements a wide range of dishes, both savoury and sweet. To make the most of rhubarb, you’ll need to counter its natural sourness with large amounts of sugar – that’s why it’s so wonderful in desserts. When paired with fresh mackerel or similar, Rhubarb works hard to cut through the oiliness of the fish. For for something more unusual, but just as tasty, why not try rhubarb with black pudding?
