Banana Bread

The easiest banana cake to make, just right for using up those very ripe bananas in the fruit bowl. You can make this one in a loaf tin and then cut into slices and butter with Lurpak® for an after school treat.

The easiest banana cake to make, just right for using up those very ripe bananas in the fruit bowl. You can make this one in a loaf tin and then cut into slices and butter with Lurpak® for an after school treat.

Instructions

Grease and line a 2lb loaf tin. Melt the Lurpak®, sugar and vanilla in a saucepan over a medium heat.

Remove from heat and add the mashed bananas, mix well.

Add the beaten egg then stir in the flour and milk.

Pour the mixture into the prepared tin, sprinkle with a tablespoon of demerara sugar for a crunchy topping. You can also add a few slices of banana to bake into the crust.

Bake at 170°C/340°F/Gas Mark 3 for 35 minutes, until a skewer comes out clean. Leave to cool and enjoy!

  • 125g Lurpak®
  • 150g caster sugar
  • 1 tsp. vanilla extract
  • 1 egg, beaten
  • 2 very ripe bananas, mashed
  • 190g self raising flour
  • 60ml milk
