- 3,5 fl oz sugar
- 3,5 fl oz apple juice
- 1,75 fl oz glucose syrup
- 150g Lurpak Salted, soft
- Pinch of salt
Melt the sugar and glucose syrup on a pan until it starts to caramelize. Add the apple juice to the mix and let boil - be patient and avoid stirring.
When the mass is thoroughly boiled and has achieved a uniform texture, take the pan off the heat and let the mass cool off. Whisk butter and salt until light and fluffy then add the caramelized apple and whisk it with the butter.
Store in a glass at room temperature.
